Baked Oatmeal

Serves 4–6

  • 3 cups rolled oats
  • 1 cup maple or date sugar
  • 2 tsp. ground cinnamon
  • 2 tsp. aluminum-free baking powder
  • 1 tsp. sea salt
  • 1 cup milk (I prefer to use almond or rice milk)
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 2 tsp. pure vanilla extract
  • 3/4 cup dried cranberries or raisins
  1. Preheat oven to 350°.
  2. In a large bowl, mix together oats, maple or date sugar, cinnamon, baking powder, and salt.
  3. Beat in milk, eggs, melted butter, and vanilla. Stir in dried cranberries. Spread into a 9 x 13-in. baking dish.
  4. Bake for 40 minutes.
