Makes about 1 cup
- 2 lbs. dandelion greens, stems removed and thinly sliced
- 1 onion, sliced
- 2 garlic cloves, thinly sliced
- 1/4 cup extra-virgin olive oil
- 1/2 tsp. sea salt
- Pinch of smoked red paprika
- Place all ingredients in a blender and blend to a smooth paste, adding additional olive oil if necessary.
- Serve with your favorite pasta.
