Irish Soda Bread

Yields 1 loaf

  • 2 1/2 cups organic, unbleached all-purposed flour
  • 2 1/2 cups organic whole wheat pastry flour
  • 1 cup Sucanat
  • 1 Tbsp. baking powder
  • 1 1/2 tsp. sea salt
  • 1 tsp. baking soda
  • 1 stick European cultured butter, such as Organic Valley or Kerry Gold butter, cut into small pieces
  • 2 1/2 cups organic dried cranberries and cherries
  • 1 1/2 Tbsp. anise seeds
  • 2 1/2 cups organic buttermilk
  • 1 large free-range egg
  1. Preheat oven to 350 degrees F. Butter a 10″ ovenproof skillet.
  2. Combine dry ingredients in a bowl and mix well.
  3. Add butter and cut into flour with your fingertips, until mixture is crumbly. Mix in dried cranberries, cherries, and anise seeds.
  4. Whisk buttermilk and egg in a separate bowl and add to flour mixture. Mix until well combined.
  5. Transfer to the skillet. Cut a deep “X” in the middle of the dough.
  6. Place skillet in oven. Bake until cooked through and knife inserted in the center comes out clean, about 1 hour.
  7. Cool bread in pan and then transfer to rack to cool completely.
