Light & Cleansing Vegetable Soup

Serves 4–6

  • 1 onion, diced
  • 1 leek, halved and thinly sliced
  • 2 carrots, diced
  • 3 celery ribs, diced
  • 1 head of fennel, cored and diced
  • 1 cup green beans, trimmed and halved (optional)
  • Parsley, chopped, for garnish
  1. Combine the vegetables in a large pot. Cover with cold water.
  2. Bring to a boil and allow to simmer until vegetables are soft, about 30 minutes.
  3. Garnish with parsley.
