Sautéed Arugula & Dandelions Greens

Serves 6

  • 1/2 cup extra-virgin olive oil
  • 2 cloves, thinly sliced
  • 1/2 cup pine nuts or walnuts
  • 1 1/2 cups arugula, washed and dried
  • 1 1/2 cups dandelion greens, washed and dried
  • 1/4 cup Parmesan cheese
  • 1 tsp. sea salt
  • Juice of 1 lemon
  1. Heat olive oil in a large sauté pan. Sauté garlic until fragrant.
  2. Add pine nuts or walnuts, if using, and stir until lightly browned.
  3. Add arugula, dandelion greens, stir until wilted.
  4. Season with salt, pepper, lemon juice and Parmesan cheese.
