For the Dressing
- 1 Tbsp. fresh lemon juice
- 1/2 tsp. garlic, chopped
- 1/2 tsp. mustard
- 1/2 tsp. sea salt
- Freshly ground black pepper to taste
- 4 Tbsp. extra-virgin olive oil
For the Salad
- 1/2 lb. mung bean/lentil sprouts
- 1/2 lb. sunflower shoots or pea shoots
- 1. Combine lemon juice, garlic, mustard, salt and pepper in a small bowl and mix well. Slowly add olive oil, whisking constantly.
- 2. Add mung bean/lentil sprouts, and sunflower or pea shoots (if using).
