Spring Sprout Salad

Serves 6

For the Dressing

  • 1 Tbsp. fresh lemon juice
  • 1/2 tsp. garlic, chopped
  • 1/2 tsp. mustard
  • 1/2 tsp. sea salt
  • Freshly ground black pepper to taste
  • 4 Tbsp. extra-virgin olive oil
For the Salad

  • 1/2 lb. mung bean/lentil sprouts
  • 1/2 lb. sunflower shoots or pea shoots
  1. 1. Combine lemon juice, garlic, mustard, salt and pepper in a small bowl and mix well. Slowly add olive oil, whisking constantly.
  2. 2. Add mung bean/lentil sprouts, and sunflower or pea shoots (if using).
