Stir-Fried Shiitake Mushrooms with
Celery and Ginger

Serves 6

  • 1 Tbsp. olive oil
  • 1-inch piece of fresh ginger, cut into matchsticks
  • 4 celery stalks, sliced on the diagonal into 1/4-inch pieces
  • 6 scallions, thinly sliced (white and green parts separated)
  • 8 oz. shiitake mushrooms, stems removed and thinly sliced (about 4 cups)
  • 1 Tbsp. water
  • Sea salt and freshly ground black pepper
  1. Heat a large sauté pan over medium heat. Put the oil in the pan and swirl it around so that the whole pan is coated with oil.
  2. Add the ginger and stir-fry until fragrant. Add celery and white parts of the scallions and stir-fry for 1 minute.
  3. Add the shiitake mushrooms and cook, stirring frequently, for 2 to 3 minutes.
  4. Add the water and sea salt and freshly ground black pepper to taste. Reduce heat, cover the pan and cook another 2 minutes, until vegetables are fully cooked. Garnish with green parts of scallions.
