Stir-Fried Shiitake Mushrooms with Celery and Ginger
Serves 6
1 Tbsp. olive oil
1-inch piece of fresh ginger, cut into matchsticks
4 celery stalks, sliced on the diagonal into 1/4-inch pieces
6 scallions, thinly sliced (white and green parts separated)
8 oz. shiitake mushrooms, stems removed and thinly sliced (about 4 cups)
1 Tbsp. water
Sea salt and freshly ground black pepper
Heat a large sauté pan over medium heat. Put the oil in the pan and swirl it around so that the whole pan is coated with oil.
Add the ginger and stir-fry until fragrant. Add celery and white parts of the scallions and stir-fry for 1 minute.
Add the shiitake mushrooms and cook, stirring frequently, for 2 to 3 minutes.
Add the water and sea salt and freshly ground black pepper to taste. Reduce heat, cover the pan and cook another 2 minutes, until vegetables are fully cooked. Garnish with green parts of scallions.
